Ilda Trujillo, cook and server at El Pollo Ranchero restaurant in Santa Ana for 23 years said the most difficult aspect of working at the restaurant during a pandemic was adjusting to a new system of health & safety protocols. Business was slow and money was tight when the restaurant reopened but it’s improved slowly since. “Before the pandemic, I think we didn’t value what we had,” Trujillo said. “We didn’t value our jobs or the people around us.
